Chicken and Dressing Recipe:

Take 2 hens with giblets (remove giblets and defrost). Wash hens and put them along with the giblets in a large roasting pan (preferably not flat on bottom - if it is flat, put foil in bottom so hens won’t stick). Fill the pan with water about 1/3 to 1/2 full (this will be your broth). Add 2-3 Tablespoons of salt and cover the tops of the chickens with foil so they don’t brown too quickly. Put the lid on and bake at 300 degrees for about 5 hours until golden brown.
Boil 6 eggs. (Bring eggs and water in a saucepan to a boil, then cover and remove from heat. In 18 minutes they will be ready.)
In a saucepan, mix 3 cups of chopped celery and 2 cups of chopped onion and enough of the broth you made to cover it. Cook until tender.
Broil 8 pieces of toast, crispy. Make 2 pans of Gladiola yellow mix cornbread. Add the toast and 2 pans of cornbread to a box of Stove Top chicken flavor dressing.
Grease a 9.5 x 14 x 2 pan or a 10.5” x 12/5”.
Check your broth and remove the giblets (neck bones, livers, etc. check for bones and remove any from your broth.)
Put aside 2 cups of broth for the giblet gravy. Slice 2 boiled eggs into that broth for the gravy. Dice up the remaining 4 eggs into the cornbread/dry ingredients mixture. Pour the celery/onion mixture in with the cornbread mixture. Add broth to the mixture. It will usually take all the remaining broth. You could add a little water if you didn’t have enough broth, but if you filled the pan 1/2 full of water you’ll have plenty.
Add 1 can cream of chicken soup. Salt and pepper the mixture to taste. Everything in this is basically already done.
Take out a couple of spoonfuls and put into your giblet gravy. Once the gravy is not hot, add a little milk to thicken it.
Pour the remaining mixture into the greased pan and bake at 350 for 45 minutes to an hour until it is golden brown and bubbly.

3 cups celery
2 cups onions
8 pieces of bread
2 packs Gladiola yellow cornbread mix
1 box Stove Top chicken flavor stuffing
1 can cream of chicken soup
Why hens and not turkey you might ask? Hens are much richer and make a far better broth. You can still cook a turkey separately if you like and serve it as well. We usually just eat the two hens and sometimes add a small ham. Good luck!

The Nimitz Museum will officially christen its new 32,000 square foot addition this coming weekend as part of a weekend long celebration. The world famous facility will now reach a size of nearly 65,000 square feet and hosts the most extensive and largest collection of artificats, photographs, oral histories, etc. to be found anywhere in the world regarding the Pacific War. According to Richter Architects, "The scale of the design steps up to convey the national significance of the museum and the global and historic magnitude of the Pacific War. Am I the only one out there wondering if anybody can still make good Thanksgiving dressing? I mean I only cook a couple times a year, but when I do, it's for the holidays and includes great dressing from scratch. My family and I ate out at a very nice upscale this restaurant this Thanksgiving because there was just no time left to cook. This restaurant has never served a bad meal, but their dressing....was definitely not good old fashioned southern cornbread dressing. And then we can start the sage vs. no sage debate (I'm in the no sage camp.) I have a great dressing recipe at home and can post it here if there are others out there longing for the real deal! I can promise you, we'll be having it at my house for Christmas!

We have one cottage available for this weekend (Cindy's Bed and Breakfast) because it's soooo new...it's not even on the website yet! BUT, email the service at [email protected] and they'll send you the photos. It is absolutely gorgeous and won't last another 24 hours, so call now! Did I mention how gorgeous it is?
We also have ONE room available for a Friday only stay and a handful available for a Saturday only stay. It's going to be a great time in Fredericksburg. The weather should be fantastic! Both Friday and Saturday are expected to be sunny with highs in the upper 60's and lows in the 40's and 50's. So pack up the leftover turkey and head on over to Fredericksburg!

Fredericksburg has just become the proud owner of the largest German Christmas pyramid in the United States. The traditional German Christmas symbol was built in Germany and was assembled locally by German craftsman. It has been suggested that this type of pyramid is the precursor to today's Christmas tree. According to Wikipedia, "[The Christmas pyramid] is a kind of Carousel with several levels some depicting Christian motifs, such as angels or manger scenes, and others with more secular motifs such as mountain-folk, forests, and other scenes from the everyday life of people in the Erzgebirge. The spinning motion of the pyramids is traditionally achieved with the help of candles whose rising heat spins a propeller above."
The pyramid will soon be formally inducted as a new Fredericksburg tradition and will serve as a focal point of our beautiful Marktplatz during the holidays. Come see us and help us celebrate!

Well the BIG weekend is only one weekend away. The most exciting time of the whole year in Fredericksburg (IMHO) is the weekend after Thanksgiving. We only have 6 rooms left!...and one of them is Paradise Loft! The weekend BEFORE Thanksgiving, however, is usually the calm before the storm and a fantastic time to hit the shops for great selection. The trees are really starting to turn here in Fredericksburg and the surrounding Hill Country. The drive along Highway 87 between Fredericksburg and Comfort is always beautiful. I went to San Antonio yesterday and thoroughly enjoyed the drive. There are finally some of the beautiful red leaves appearing that are my favorites! We took a trip in October all the way up to Yellowstone and the Grand Tetons hunting fall foliage. I can tell you that what we have right here in our back yard is prettier than anything we saw on that trip. Nearby Lost Maples State Park is supposedly to be especially beautiful this time of year. I'm going to make it a goal to visit it this season. If anyone out there has already been, post and let us know the state of the leaves.
You've asked for it, you got it! Here's the recipe for the wonderful coffee cake we often serve at the Inn on the Creek and at the Queen Anne B&B and Spa. This is a sure-fire winner and comes out great every time. Give it a try and let us know what you think!
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
1 cup granulated sugar
1 cup brown sugar
2/3 cup butter or margarine, softened
1 cup buttermilk (or sour milk)
1 cup apples, peeled, cored and chopped
1/2 cup chopped black walnuts or pecans
Mix flour, baking powder, soda, salt and 1 teaspoon cinnamon in a bowl and set aside. In another bowl, cream granulated sugar, 1/2 cup brown sugar, and butter. Mix in eggs, buttermilk, and flour mixture. Fold in apples. Pour into a 9x13" greased baking pan. For topping, combine remaining 1/2 cup brown sugar, walnuts, and 1 teaspoon cinnamon and sprinkle over batter. Cover with foil and put in refrigerator until next morning. Uncover and let stand about 30 minutes. Bake 45 minutes in a 350-degree oven. It's best served warm. Try drizzling coffeecake with a thin powdered sugar frosting before serving. (For this I use about 1.5 cups powdered sugar and 1/3 cup of milk stirred together).

This year you will see new and improved lighting above the rink (maybe even a disco ball?) so be on the lookout for some exciting changes. Hunting season opens this weekend! The paper is reporting that the deer may be in luck for a while. We've apparently had an abundance of acorns this year, so they aren't moving around as much in search for food. Run Bambi, Run! LOL Seriously, hunting season is always a big time in the Hill Country. Many hunters visit annually and bring the wife for a little shopping trip while they hit the lease. One of the most popular shirts in our store for a long time is a camouflage t-shirt that says, "He Hunts: I Shop!" Let the games begin!
